Round rice noodles get added last. After just 10 seconds, the bowl is ready to eat. The original version comes with an opaque, slightly under-seasoned pork and chicken broth, and a single slice of beef; for more protein and flavor, try the pork cartilage noodle soup. Spice lovers will find plenty of options, including green pepper fish fillet soup made with tingling Sichuan peppercorns, and pickled pepper soup that’s tangy with a sharp bite of heat. For vegetarians, there’s a thick tomato-based broth. Most of the appetizers are passable except for the sticky chicken wings, with crispy skin that’s coated in a caramelized sweet-spicy sauce.
