The Chinese city of Lizhou used to be known for its coffins, but nowadays, people are flocking to Liuzhou for a different reason: to get a taste of the real-deal luosifen, or river snail soup. The soup has made waves on Chinese social media in recent years. At R’ Noodles, owner Ruan Feng Lan serves luosifen the way she made it back at her restaurant in Liuzhou for 40 years. The broth is simultaneously spicy, pungent, and sour, while toppings like pickled turnip and peanuts add crunch. The round rice noodles, a little thicker than spaghetti, are silky and slippery. For a more mild-flavored dish, go for the Guilin-style rice noodles, which come with both roasted and fried pork, house-pickled long beans, a slow-simmered sauce, and a light bone broth on the side. Other dishes, like the combos, are a little lacking in flavor. Don’t miss the hot sauce made with pickled turnips, and the refreshing housemade soy milk.
