La Santa Torta’s mission is to bring quality, artisan beef birria — a slow-cooked, Jalisco-style meat stew typically reserved for special occasions— to the public. At this truck, the most popular birria format is in the cheesy, crispy red tacos, stained red from the consomé, or broth, that the birria’s cooked in. The birria is marinated for 24 hours and cooked for seven, using spices that Oblea’s grandmother brings back from Jalisco. Be sure to order a cup of consomé on the side to dip your tacos. Try the elotes chidos, or “cool corn” — it’s kernels of fresh corn topped with Flamin’ Hot Cheetos, cotija cheese, lime juice, Tajín, and Tapatío. For dessert, don’t miss the freshly fried churros, which are stuffed with cajeta (goat milk caramel) and served with dulce de leche on the side for dipping.
