Shubbie Aishida, co-owner of Golden Safari, is picky about her spices. Growing up in Lagos, Nigeria, her father sold meat pies and beef suya, while her mother was a fashion designer and caterer. Today, her mother and sisters in Lagos help her import many of the spices for her restaurant. For appetizers, try the beef suya — slices of grilled spiced beef topped with grilled onions — or the moi moi, a vegan custard-like dish made of puréed beans. Jollof rice is a popular standby, served with tasty fried plantains. Don’t miss the selection of soups like the egusi soup. The egusi seeds thicken the soup while adding fluffy texture, and spinach adds welcome bitterness. Or try the abula, a three-in-one soup with tomato stew, a yellow bean and palm oil soup, and a green jute leaf soup.
