Food trucks tend to have an “anything goes” attitude when it comes to French fries, adorning the classic side dish with everything from chili to curry. This is an approach LIBA’s food truck has used to great effect. The fries — warm, flavorful, crispy on the outside, and melty on the inside — are tossed with garlic, cilantro, and lime, and are the perfect foundation for the many topping options at LIBA’s condiment bar, which features all manner of seasonal salads, pickles, and slaws. Moroccan carrot? Red cabbage with toasted black sesame seed? Snap pea fennel salad with miso-ginger vinaigrette? Pile it on. A little of almost everything is the path to salivation. Don’t forget the fried pickled onion or the feta. The fries are even better with a couple of crunchy falafel balls mushed in for good measure. LIBA’s is opening a brick-and-mortar store this summer (380 17th St., Oakland), but until that happens, get your spud fix around the bay at Off the Grid and at farmers’ markets.
