At Oakland’s “Asian Cajun” specialist Rockin’ Crawfish, most of the food is cooked in sauce-filled bags, which your server then cuts open tableside, emptying the contents onto big plastic plates. You could ask for utensils, but most everyone just digs in with their bare hands, discarding sucked-clean shrimp heads and other sea-creature carcasses aside as they go. With such a simple cooking method, the freshness of the seafood and the flavor of the sauces are key — we like the garlic-butter sauce for clams and the Cajun-inflected “rockin’ combo” sauce (set to your personal spice preference) for everything else. Make sure you ask for a plastic bib and plenty of hand wipes. Meanwhile, the giant waffle fries (also eaten with your hands, natch) are one of our favorite guilty pleasures.
