You gotta love a project that operates using the tagline “Imbibio Gratia Imbibio” — roughly translated from the Latin, “to drink for the sake of drinking” — but that’s far from the only reason that this operation, the brainchild of local bartenders Eric Quilty and Morgan Schick and popping up on a roughly monthly basis at various local bars, is the East Bay’s best. Feeling complacent at their day jobs — at San Francisco’s Nopa and Piedmont Avenue’s Adesso, respectively — Schick and Quilty founded Jupiter Olympus with the idea of experimenting with new techniques, ingredients, and ideas, of, essentially, stretching their and their patrons’ limits. Mission accomplished: Previous events at Acme Bar and Easy Lounge have invoked house-made carrot soda, dry ice, smoke-infused tonic water, chili powder as mixer, and many, many other artifacts of the weird and wonderful. Drinking for the sake of drinking is great, sure, but this is something more.
