At Hot Pot House, the sheer number of choices can be daunting for the novice. Start by picking one of six different soup bases — everything from the deceptively plain (but delicious) “house flavor” to the fiery Szechuan mala flavor to several versions that feature Chinese medicinal herbs. Then, decide what you want to cook. The easiest option is to pick a pre-set combo and supplement it with a couple of extra items. The “lucky” hot pot — which includes tripe, intestine, and pig’s blood — appeals to the adventurous. Our favorite, the “village style” hot pot, comes with pork skin, fish balls, shrimp, and frozen tofu (super-spongy, perfect for soaking up the broth and dipping sauces). Aside from hot pot, the must-order dish is the wontons in red oil, which are spiked with the unique numbing heat of Szechuan peppercorns.
